New to the word "shank"? It consists of the leg bones and the muscle that surrounds it. To no surprise, pasture cattle walk a lot so this meat is a tougher, leaner meat.
My favorite use for this cut is Osso Bucco. Osso Bucco is a delicious dish where you sear the meat, and then cook it covered in the oven for multiple hours to end with a tender cut. The extra bonus is in the bone marrow in the center of your meat! Jam packed full of nutrition and a beefy flavor. Cooked correctly, these shanks can be absolutely tender and delicious plus a very inexpensive dining option.
They are amazing smothered in a mushroom gravy as well or used to make a meaty beef stew or bone broth!
